Easy Homemade Rhubarb Infused Gin
Nothing is more early summer than the flavor of rhubarb. I already shared my Rhubarb Simple Syrup this year and I couldn't wait to use more of my fresh rhubarb to make this rhubarb gin recipe. This beautiful pink gin makes the most delicious cocktails perfect for some summer sipping this time of year!

Ingredients
- Dry Gin - To be honest you can use any type of gin it doesn't have to be a dry gin but a London dry gin is what I like to use for this infusion. Opt for a good quality dry gin, as it will significantly affect the final taste. The better the gin, the better the infusion but also note you don't have to use top shelf gin, I usually like to grab a bottle priced somewhere in the middle.
- Rhubarb - Use fresh, firm rhubarb stalks for the best flavor. Avoid using any that are wilted or mushy. Rhubarb season can seem relatively short so try to get this made while it is fresh in season, if not you can use frozen rhubarb just make sure you thaw it first. I would also recommend to leave the skin on so you get that pretty pink color!

Instructions
Preparation
Rinse off the rhubarb and pat dry.
Leaving the skin on, chop the rhubarb into small pieces.
Infusion Process
Add the chopped rhubarb to a large jar.
Pour in the 2 cups of gin.
Cover the jar and shake well to mix everything together.
Store the jar in a cool, dark place out of direct sunlight for one week.
Check on the infusion periodically, giving it a gentle shake each time.

Straining
After a week, taste test the infusion to ensure it has reached your desired flavor.
Line a fine mesh strainer Affiliate Link with cheesecloth Affiliate Link and place it over a large measuring glass or container.
Carefully pour the infusion through the strainer, allowing it to drip naturally without pressing on the rhubarb.


Storing
Transfer the strained rhubarb-infused gin to an airtight glass jar. (An empty gin bottle works great for this.)
Store the jar out of direct sunlight and room temperature until ready to use.

- Line a fine mesh strainer with cheesecloth over a large measuring glass of container. Carefully pour the infusion through the strainer. Don't push down on the rhubarb as it will make the infusion foggy, just let it drip. Transfer the rhubarb infused gin to an airtight glass jar and store out of the sunlight. Use in your favorite gin recipes.
