Blueberry Ginger Beer Mocktail Recipe

This mocktail starts off by making a quick blueberry simple syrup by combining fresh berries with sugar and water on the stovetop and finishing it off with a bit of vanilla extract to give it a more complex flavor. Once cooled this will be added to the top of ginger beer and lemon juice in an ice filled glass. All mixed together with the most perfect blueberry flavor.
This is a beautiful drink that is great any time of year but especially perfect for a hot summer day!

Equipment Needed
- Small saucepan – For making the blueberry syrup
- Stirring spoon – To mix the ingredients
- Airtight container – For storing leftover syrup
- Measuring cups & spoons – For accuracy
- Highball or pint glass – For serving
- Ice cubes – To keep it chilled
Ingredients
- Blueberries - These can be fresh or frozen, either will work!
- Granulated Sugar - To sweeten the blueberry syrup.
- Vanilla Extract - I wanted to give this drink a little something extra and the vanilla seemed to fit the part, it gives the blueberry syrup a perfect amount of complexity without taking away from the drink as a whole.
- Ginger Beer - There are a lot of good ginger beers to choose from. This recipe calls for 6 ounces, which is half of a 12 ounce bottle or a lot of brands come in a smaller bottle like fever tree for a single serving.
- Lemon - For the juice, a bottled lemon juice will be to tart for this mocktail.

Instructions
Making the Blueberry Syrup:
In a small saucepan, combine blueberries, sugar, and water over medium heat.
Once the mixture reaches a boil, lower the heat to medium-low and let it simmer, stirring occasionally for 6-8 minutes, until the blueberries break down and the mixture looks syrupy and jammy.
Remove from heat and stir in the vanilla extract for added depth of flavor. Let the syrup cool before using. Store it in an airtight container in the refrigerator for up to 2-3 weeks.
Assembling the Mocktail:
Fill a highball or pint glass with ice.
Pour the freshly squeezed lemon juice over the ice. Pour in the ginger beer.
Add 2 tablespoons of the homemade blueberry syrup on top. Give the drink a gentle stir to incorporate all the flavors.

Instructions

Once it is a boiling turn to medium-low and let simmer stirring occasionally 6 to 8 minutes until the blueberries are broken up and it starts looking sort of jammy. Remove from the heat and stir in the vanilla extract. Let cool before using or storing. This syrup will continue to thicken as it cools. Store in an airtight container in the fridge, should last 2 to 3 weeks.
- To make your mocktail add ice to a large glass (like a pint glass or a highball). Add the lemon juice overtop the ice followed by the ginger beer. Add the blueberry syrup to the top and give it all a gentle stir. Enjoy!
