Beet Margarita Recipe
This recipe is inspired by a now closed restaurant/brewery from a neighboring town. Whenever we went to said brewery I always got the same beverage, a Beet Margarita. Lucky for me a had taken a photo of the description of the drink before they closed and now I have recreated it, and I honestly think my version is better.
On their drink menu they had the drink listed as "Beet infused tequila, rosemary agave, rocks" and it was always served in a pint glass with a ton of ice, which always led my to suspect the drink was waaay watered down, regardless it was still delieious and I loved the earthiness yet sweetness of the drink.
So for my own version I made some slight changes including adding cointreau and instead of making a rosemary agave syrup I just simply threw a sprig of fresh rosemary into the cocktail shaker, and honestly I liked the result better. I recommend not serving it in a pint glass but a rocks glass or similar size so that it doesn't get watered down with too much ice.

Equipment Needed
- Cocktail Shaker - If you don't have a cocktail shaker a glass jar with a tight fitting lid works just a well.
- Jigger or measuring tool - A bar Jigger is a handy tool to have around that measures out ounces.
- Glass - Rocks/Whiskey Glass or similar sized cocktail glass.

Ingredients
- Lime Juice - Freshly squeezed is a must, using the bottled stuff the drink won't taste as good.
- Cointreau - Or another orange liqueur such as triple sec or grand mariner will also work well.
- Agave Nectar - Adjust to taste, I thought ½ ounce was just right but feel free to add more if you would like. You can also use simple syrup if you need to substitute.
- Beet-Infused Tequila -
- Rosemary - For shaking and flavoring the drink, you can leave this out if you want. I did make one without and I noticed that the margarita without the rosemary had a much stronger earthiness to it, the one with the rosemary definitely had a more well rounded flavor without being to savory.
- Garnish - Thin beet slice, rosemary sprig, and/or lime slice

Instructions
Fill a cocktail shaker with ice cubes. Add lime juice, Cointreau, agave nectar, beet tequila, and a rosemary sprig.
Shake vigorously for 10 to 20 seconds until well chilled.
Strain into an ice-filled glass.
Garnish with a thin slice of beet, rosemary sprig, and/or a lime slice. Enjoy!

Ingredients
- 1 ounce lime juice
- 1 ounce Cointreau
- ½ ounce agave nectar
- 2 ounces beet tequila
- 1 rosemary sprig
Instructions
- Add the lime juice, cointreau, agave nectar, beet tequila, and rosemary spring into a cocktaial shaker along with a handful of ice. Cover and shake for 10 to 20 seconds until the drink is well chilled.
