Ingredients

Instructions
Place the mint leaves at the bottom of a cocktail shaker. Gently muddle them with a muddler or the back of a wood spoon to release their aromatic oils.
Add the pineapple juice, coconut water, and apple cider vinegar to the shaker. Toss in a handful of ice cubes to chill the mixture.
Secure the lid on the cocktail shaker and shake vigorously for about 10 seconds.
Fill two serving glasses with ice cubes. Divide the mocktail mixture evenly between the two glasses. Pour the ginger beer into each glass, filling to the top.
