Tequila Aperol Cocktail aka an Aperol Margarita with Strawberries!
I love a good Aperol Spritz and I love a good Margarita, this drink is kind of a baby of these two drinks, if you added some strawberries. So actually this leans a lot more towards being an Aperol Margarita Recipe more than anything else but the Aperol really does make all the difference.
This sweet pink drink features a wide variety of flavors between the bitterness of aperol, the citrusy tequila, and sweet strawberries, brought together with an egg white for an amazing mouth feel this is a drink to made to make over and over in the summertime.

Equipment Needed
- Cocktail Shaker - I find a Boston Shaker works best for this drink. This way you can filter out the strawberry into one side of the shaker instead of having to use a completely different cup. But use whatever you have!
- Muddler - If you don't have a muddler you can use the back of a wooden spoon.
- Small Fine Mesh Strainer Affiliate Link - For Straining out the strawberry pulp.
- Cocktail Glass like a Coupe Glass - This drink looks great in a fancy coupe glass with a strawberry on the edge.
Ingredients
- Fresh Strawberries - A pair of fresh strawberries that are ripe and nice and juicy work best for this recipe. For the strawberry that you are muddling you want to choose a fairly large one, if you don't have any large strawberries use two small strawberries for muddling.
- Lime Juice - Fresh lime juice is a must, no bottled lime juices.
- Aperol - The well known italian aperitif with its beautiful bright color, this liqueur has taken oven in the past decade and is usually known for its addition to a spritz.
- Tequila - A good blanco tequila (silver tequila) works best in this drink, I like to use the brand Tres Agave.
- Agave Nectar - Just to sweeten the drink, without it the Aperol really gives the drink a bitterness so I wanted to round it out a little bit with some agave nectar. I chose this sweetener because it goes the best with tequila but you can use other sweeteners if you prefer it.
- Egg White - This is to give this drink a texture boost, I wanted to elevate the cocktail a little bit so to smooth it out with an egg white just seemed perfect. It gives the drink the beautiful foam!

Instructions
One of the strawberries needs to be hulled and quarter cut, the other will be used as the cocktail's garnish. Add the cut strawberry to the bottom of the cocktail shaker. Muddle until the strawberry has reached a jam like consistency.
Add the lime juice, aperol, tequila, and agave nectar to the shaker. Cover and shake to mix everything together with the strawberry. Use a fine mesh strainer Affiliate Link to strain the drink into a clean vessel. Clean out the shaker if it has strawberry pieces stuck to it.
Pour the drink back into the shaker. Add the egg white. Cover and dry shake the cocktail for 10 to 15 seconds.
Open the shaker and add a large handful of ice. Cover and shake again another 10 to 15 seconds.
Strain the drink into a coupe/cocktail glass. Garnish the side of the glass with a fresh strawberry. Cheers!

- 2 ounces tequila
- ½ ounce agave nectar
- ¾ ounce egg white

If you have Strawberry Infused Tequila feel free to use that for this drink. Just leave out the muddled strawberry and save yourself a step by using the Strawberry Tequila.
