Strawberry Elderflower Cocktail
This is a copycat of a cocktail I had at a local bar a summer back. What caught my eye was the cocktail was served with a watermelon ice cube, and I just couldn't get over how good of an idea it was. It also featured strawberry infused tequila which has quickly become one of my favorite things!
This cocktail is fairly simple to make and perfect for those who love fruity and floral drinks! It also just screams summer with the garnish of a watermelon ice cube, which yes does change the flavor of the drink as it melts in but in the best way possible.
Equipment Needed
- Cocktail Shaker
- Jigger or measuring tool
- Glassware (I recommend a rocks glass)
- If you are making watermelon ice cubes you will also need a blender and ice cube trays.

Ingredients
- Strawberry Infused Tequila - Create your own infusion or use strawberry flavored tequila from the liquor store.
- Lemon Juice - As always fresh is best in a drink!
- Agave Nectar - I think this pairs perfectly with the tequila but if you don't have any use Plain Simple Syrup instead.
- Elderflower Liqueur - There are several brands of elderflower liqueur to choose from, they all generally taste the same.

- Fresh strawberry or lemon slice for garnish
Making Watermelon Ice Cubes
Decide how much watermelon you want to use, I generally use about half a large watermelon because I like a few extras (the watermelon ice cubes are really good in a glass of water).
Remove all the green skin and white edges from the watermelon. Roughly cut the watermelon so it will fit into pieces in the blender.
Once all the watermelon has been added to the blender blend until smooth.
Pour the blended watermelon into ice cube trays and transfer to the freezer. Once all the way frozen use in your cocktail!
Instructions
Add the strawberry tequila, lemon juice, agave, and elderflower liqueur into a cocktail shaker with a handful of ice. Cover and shake until chilled, about 10 to 20 seconds.
Add watermelon ice cubes to a glass. Pour the strawberry tequila cocktail over the watermelon ice. Garnish with a fresh strawberry.
Serve immediately and savor the refreshing flavors!

Infusing Tequila
It's easy to make your own strawberry-infused tequila! I wrote a whole blog post about it Strawberry Infused Tequila, but it is really as simple as adding strawberries to tequila for about 3 days and then straining.
Can I use store-bought strawberry tequila?
Yes, you can! However, homemade strawberry-infused tequila will give your cocktail a fresher and more natural strawberry flavor.
What if I don’t have elderflower liqueur?
You can substitute with a small amount of another floral or citrus liqueur, or you can simply omit it for a different but still delicious flavor profile.
Can I make this cocktail in advance?
This cocktail is best served fresh, but you can prepare the cocktail a few hours ahead of time and keep it chilled until you are ready to serve.
What other ice cubes can I use? Do I need watermelon ice cubes?
Regular ice cubes work just fine! I have made it plenty of times without the watermelon ice cube and still loved it every time. You can also get creative, try using other fruit-infused ice cubes like lemon or strawberry for added flavor.
