After making a batch of my Rhubarb Infused Gin I just knew I had to make a signature cocktail with it, so I followed my love for the combo of Strawberry Rhubarb and it turned out amazing!
This Strawberry Rhubarb Smash is versatile enough for any occasion. Serve it at summer parties, weekend brunches, or enjoy it as a refreshing evening drink. Its bright, fruity profile makes it a crowd-pleaser that suits any setting.

Equipment Needed
- Cocktail Shaker
- Muddler

Ingredients
- Strawberries - You will want two fresh juicy strawberries for making the drink and probably one more for the garnish.
- Simple Syrup - You can double down and use Rhubarb Simple Syrup. Or just opt for plain Simple Syrup or even Honey Simple Syrup.
- Lemon - A lemon for fresh lemon juice. Note I also tried this drink with fresh lime juice as well and it was also good, so you can use a lime if that is what you have.
- Rhubarb Infused Gin - Yes you will need to make your own rhubarb gin before you make this drink. Or you can also purchase rhubarb gin, their are a few brands that sell rhubarb flavored gin.
- Splash of Club Soda - Just a splash of plain club soda or seltzer water. If you are a fan of tonic water you could also use that in place of soda water. You could also give a little bit of ginger ale a try too.
- Optional Garnish - Strawberry and piece of rhubarb. You could get fancy and also include a sprig of mint or a lemon or lime wedge.
Instructions
Prepare the strawberries Add the quartered strawberries to the bottom of a cocktail shaker. Use a muddler to muddle them down well to a jam-like consistency.
Mix the ingredients Add the rhubarb simple syrup, lemon juice, and rhubarb gin to the cocktail shaker. Add a handful of ice. Shake the mixture until chilled, about 10 to 20 seconds.
Strain the cocktail Use a Hawthorne strainer Affiliate Link to strain the cocktail into a glass filled with ice.
Finish the drink Top off with a splash of club soda. Garnish with a strawberry and a piece of rhubarb.
