Refreshing Rhubarb Mint Mojito
Nothing is quite as refreshing as a tall glass of mojito on a hot sunny day! It's a good thing that rhubarb starts to grow just as the warm weather starts to show up because it is perfect to turn into a Rhubarb Mojito. At the base of this cocktail is a bright pink simple syrup made from rhubarb. This is such a fun twist on a traditional mojito plus I totally love the soft pink color.

Ingredients
For the Rhubarb Mojito
- White Rum - Use your favorite brand of white rum. I tend to use a locally distilled rum but whatever you have will work great for this recipe.
- Lime - Fresh limes for fresh lime juice, you will need about 1 for the juice and if you want to use it as a garnish you will need a second lime.
- Rhubarb Simple Syrup - See what you need for the recipe below.
- Mint Leaves - You will want several mint sprigs, you will need a few for the leaves for muddling and then you will want the top of a plant for the garnish.
- Club Soda/Seltzer Water - You need a little of this to top of the glass for that refreshing fizz. I tend to use plain seltzer but you can use club soda or soda water.
- Garnish - Fresh mint leaves and a piece of rhubarb
For the Rhubarb Simple Syrup
- Fresh Rhubarb - You will want the pink/red stalk of rhubarb. While a lot of people tend to grow rhubarb in their yard you can often find rhubarb at the grocery store or farmers markets when it is in season.
- Water
- Sugar
Instructions
You will need to make the rhubarb simple syrup first for this recipe. For detailed instructions on making that head over to my full blog post on Rhubarb Simple Syrup. That post has a ton of info and tips but you can also see the recipe at the bottom of the recipe card.
For making the mojito you will add fresh mint leaves and rhubarb simple syrup to the bottom of a cocktail shaker. Muddle the mint gently to release the flavor.
Add lime juice, white rum, and a large handful of ice. Shake until very cold (10-20 seconds).
Strain the drink into an ice-filled glass. Top with club soda. Garnish with fresh mint leaves, a piece of rhubarb, and/or lime wedges.

Use the back of a spoon or a wooden spoon to muddle the mint.
Muddling the Mint: Be gentle to avoid breaking the leaves too much, which can make the drink bitter.

This Rhubarb Mojito is a fun late spring twist on a classic mojito.
Ingredients
- 1 ½ ounces white rum
- 1 ounce lime juice (about 1 lime)
- ¾ ounces rhubarb simple syrup
- 8 fresh mint leaves
- club soda
Instructions
- Add the fresh mint leaves and the rhubarb simple syrup to the bottom of a cocktail shaker. Use a muddler to muddle the mint to release the flavor from the leaves without breaking the leaves apart too much.
- Add the lime juice, white rum, and a large handful of ice to the shaker. Shake until very cold about 10 to 20 seconds.
- Strain the drink into an ice filled glass. Top the drink off with the club soda. Garnish with fresh mint leaves and a piece of rhubarb.
Rhubarb Simple Syrup
INGREDIENTS
- 1 pound rhubarb (or 4 cups of 1 inch cut rhubarb)
- 2 cups water
- 1 ½ cups sugar
INSTRUCTIONS
- Make sure the rhubarb is clean and cut into 1 inch pieces. Transfer the rhubarb and water to a saucepan. Bring the sauce pan over medium-high heat.
- Once the water has begin to simmer turn the heat to medium-low to keep a gentle simmer. Simmer the rhubarb and water together 15 minutes, stirring occasionally.
- After 15 minutes the rhubarb should mostly be broken down by now. Set a fine mesh strainer over a clean measuring cup or bowl. Strain the rhubarb water through the fine mesh strainer. Let it strain and don't push or squeeze any of the rhubarb to get more liquid out, you might cause your simple syrup to get all cloudy if you press the rhubarb through the mesh.
- Once all the liquid has drained transfer it into a saucepan and bring it back over medium heat on the stove. Once the rhubarb water is again simmering add the sugar. Whisk the sugar until it is all dissolved. Remove from heat and set aside to cool. Once it has reached room temperature transfer to a jar or airtight container for storage in the fridge. Rhubarb simple syrup should last about 3 weeks in the fridge.

A hawthorne strainer works best for straining a a mojito with the mint leaves.
