Pear Shrub Champagne Cocktail
Shrubs are a game changer when it comes to the world of cocktails, they turn anything into a complex drink. There is so much flavor packed into a shrub from the fruit (or veggie), sugar, and vinegar not to mention they are usually spiced with different flavors. This Champagne cocktail is no exception, it will excite your taste buds and leave you wanting more.
Whether you are using a store bought pear shrub or you are making my Pear Shrub Recipe this drink will make you a believer of the powerful shrub. It worked on my husband, who always was so hesitant about shrubs. I made one of these for myself and let him try it, he immediately went to work making himself one he loved it so much!
And the best part once the shrub is made this drink couldn't be easier to make! Perfect for a party, brunch, or any celebration that calls for bubbles!

Equipment Needed
- Wine Glass
- Bartender Spoon (or a regular spoon)
- Bar Jigger
Ingredients
- Pear Shrub - This can be a store bought shrub or a homemade one. My homemade shrub uses fresh pears, white wine vinegar, sugar, and cardamom pods to create a delicious combination. Just keep in mind if you are making one at home the process does take a couple of days so you will want to plan ahead.
- Lemon Juice - Fresh is a must for the best flavor.
- Brut Champagne - I prefer this recipe with a dry brut champagne but if you prefer something a little sweeter like a bottle prosecco or cava feel free to use that instead. I also want to note since we are turning this into a cocktail there is no need to use your expensive champagnes, use an affordable or middle shelf option.
- Optional: Fresh pear slice or lemon wedge for garnish

Instructions
Fill a wine glass with ice.
Pour in the pear shrub and lemon juice.
Slowly add the champagne, filling the rest of the glass.
Use a bartender spoon to gently stir the drink—just enough to mix the flavors without losing the bubbles.
Garnish with pear slices or lemon wedge if desired.
Serve and enjoy!

Ingredients
- 1 ½ ounces pear shrub
- ½ ounce lemon juice
- brut champagne*
Instructions
- Fill a wine glass with ice. Add the pear shrub and lemon juice.
- Slowly pour the champagne to fill the rest of the glass. Use a bartender spoon to gently stir the the cocktail so the lemon and shrub aren't sitting at the bottom but not so much as to ruin the bubbles.
- Feel free to garnish with a fresh pear slice or a lemon wedge. Enjoy!
Notes
*I prefer Brut Champagne which is the driest of the Champagne family because we are adding the shrub I think this pairs best but if you prefer a sweeter champagne or prosecco you can use that too.
