Beet Infused Tequila for a Fun Margarita
This recipe was somewhat made out of necessity, a brewery and restaurant near our house recently closed. Do you want to know what I always ordered at this establishment? Their Beet Margarita. Luckily I am a weirdo who always takes photos of the descriptions of the cocktails I order so I know that this drink was made with "Beet Infused Tequila, Rosemary Agave, Lime, Rocks".
So the first order of business is to make a Beet Infused Tequila. I will follow up with the margarita on my next post, so visit my Beet Margarita Recipe for the full recipe.
Beets are such a strong flavor and so I already knew infusing them wouldn't be too difficult. Really you just need two ingredients, tequila and beets. The earthiness of the beets really gives the tequila a smooth finish and takes off a little bit of the bite, perfect for a twist on the classic margarita.
Once fully infused this tequila has a beautiful earthy yet sweet flavor from the beets, not to mention the most beautiful deep red color. I was honestly really enjoying sipping this on the rocks!

Equipment Needed
- Large 32oz glass jar with a tight-fitting lid (wide-mouth recommended).

- Cutting board, vegetable peeler, and knife for prepping the beets.

Ingredients
- 750ml Bottle of Tequila - Silver or Blanco recommended, I also recommend not using high shelf tequila since we are infusing this with a really strong flavor. Your favorite budget tequila will work best for this recipe, I personally like to use Tres Agave Tequila. You can use a reposado tequila if you want a little more caramelized flavor.
- Fresh Red Beets - Peeled and diced. You will want medium sized beets. Caution that beets will stain your hands when peeling and dicing, I like to wear food grade gloves so that my fingers don't get stained.

Instructions
Prepare the Beets: Peel and dice two medium-sized beets.
Combine Ingredients: Add the diced beets and tequila to a large glass jar with a tight-fitting lid.
Infuse: Place the jar in a cool, dark spot and let it infuse for 12–14 hours.
Strain: Use a fine mesh strainer Affiliate Link to remove the beets from the infused tequila.
Enjoy: Use in cocktails like a Beet Margarita or sip it over ice.

Ingredients
- 750ml tequila
- 2 medium beets, peeled and diced
Instructions
- Add the beets and tequila to a large glass jar with a tight fitting lid (see below in recommendations for what I use). Place jar somewhere out of direct sunlight. Let rest for 12 to 14 hours (overnight).
- Use a fine mesh strainer to strain out the tequila from the beets. Enjoy shaken with ice or in my Beet Margarita.
