Lime Ginger Beet Juice Mocktail Recipe
I am such a fan of beets I have been wanting to use beets in a mocktail for forever, so I considered myself lucky when I was traveling to Toronto recently. We stopped in a cute little restaurant for an afternoon snack and drink after our plane landed and a mocktail using beet juice caught my eye! I had to try it and it was delicious drink.
The original mocktail I tried used the restaurants own fresh pressed juices.. unfortunately for me this isn't something I have. Still determined I set off to make an amazing beet mocktail similar to what I tried with the fresh juices but with easy ingredients one could find at the grocery store.
With luck I realized that I didn't even need a juicer because at all of my local grocery stores I was able to find beetroot juice in the produce section sold by a company call Love Beets.
So this delightful fun mocktail combines the earthiness of beet juice with the zing of lime, the sweetness of apple cider, and the kick of ginger beer.
And let's talk color! Nothing dazzles quite like this gorgeous ruby red beverage. In my opinion perfect for valentine's day or a galentine's day celebration, maybe add a few strawberry hearts! You could even put a halloween spin on it... maybe add in some eyeballs or something for a little gore... You know it's a good drink when you can use it for Valentine's Day or Halloween!!!

- Fresh Lime Juice - Fresh lime juice is a must, buy a lime or two and skip the bottled stuff.
- Beet Juice - Either made fresh at home or bought from the store.
- Apple Cider - If it is not Apple Cider season regular Apple Juice can be used in it's place.
- Ginger Beer - I like to use Fever-Tree brand, and in particular I like to use the Light version in this drink. Feel free to use your favorite brand of ginger beer.
Instructions
Begin by adding ¾ ounce of fresh lime juice to your trusty shaker. Pour in 2 ounces of apple cider, and add 1 ounce of pure beet juice.
Fill the shaker with a generous handful of ice.
Secure the shaker's lid and shake vigorously for ten to fifteen seconds, allowing the flavors to meld and the mixture to reach a satisfying coldness.
Strain the vibrant concoction into a glass filled with ice.
Top off your mocktail with 1-2 ounces of ginger beer, adding a spicy kick that completes the ensemble. Give everything a quick stir. Optionally garnish with a slice of lime or lime wedge.

Absolutely, if you are lucky enough to have a juicer use it. You can even change up the flavor of the drink by adding other stuff with the beets like ginger, lemon, lime, apple, or even some veggies like cucumber or celery.
Can I use store-bought beet juice?
Yes! That is what I use. For the best result use pure beet juice without added sugars or preservatives for the best results. I use the brand Love Beets, which is 99% Beet Juice and 1% Lemon Juice as a stabilizer.
Can I drink beet juice everyday?
Yes, beet juice is perfectly safe to drink everyday, studies have even shown that if you consume it on a daily basis beet juice can help lower your blood pressure.
