Ingredients
- Gingerbread Simple Syrup - This can be store bought or made at home, either work great. If you are looking for a recipe try this Gingerbread Simple Syrup.
- Heavy Cream - This give this drink a little bit of a White Russian vibe and also is sort of reminiscent of an Italian Soda.
- Ginger Beer - Choose a high-quality, spicy ginger beer to balance the sweetness of the syrup and cream. I like to use the brand FeverTree.
- Crushed Gingersnap Cookies - Technically optional but highly encouraged. Don't fret about measuring the gingersnap crumbs to perfection, just grab a handful and crush them with your rolling pin or food processor.
- Light Corn Syrup - Light corn syrup is needed to help keep the crushed gingersnaps on the rim of the glass, any other sweetener that is lighter won't keep the heavy crumb on the glass.
Instructions
If you are adding the gingersnap rim, which I highly recommended you will start with that, if you aren't adding a rim go ahead and move on to the next step.
Add the corn syrup on a small plate and the gingersnap crumbs on a separate small plate. Take the glasses and rotate the rims onto the corn syrup, hold over the plate and let any extra drip off if needed. Take the rim and gently roll into the crushed gingersnap crumbs. Note, it might drip a little down the glass; if it starts to drip, just roll with it and dip it into the crumbs again. Set aside to dry slightly while you make the drinks.
In a cocktail shaker or a jar with a lid, combine the gingerbread syrup Affiliate Link and heavy cream with a handful of ice. Shake vigorously for 20 to 30 seconds until the mixture is well chilled.
Strain the mixture into a glass filled with fresh ice. This creates a creamy and flavorful base for your mocktail.
Slowly pour the ginger beer into the glass. Pouring gently helps control the foam and prevents it from overflowing. Garnish with another sprinkle of the crushed gingersnaps if you have them.
Serve your Gingerbread Mocktail immediately. You can also garnish it with a sprinkle of ground ginger, a cinnamon stick, or even a mini gingerbread cookie for an extra festive touch.
