Meet the Pumpkin Spice Dark and Stormy, a rich, spiced twist on the classic Dark and Stormy that’s perfect for your autumn evenings.
This cocktail brings together the warm flavors of dark rum with the ever favorite pumpkin spice, then topped off with the refreshing zip of ginger beer. It’s a balance of sweetness, spice, and citrus that makes every sip a celebration of the season.
The Dark and Stormy is a close cousin of the Moscow Mule featuring rum instead of vodka. In this recipe we are also using lemon instead of fresh lime juice because I think it goes better with the pumpkin spice. This version is surely a celebration of the fall season!
Equipment Needed
- Cocktail glass
- Cocktail spoon (for stirring)

Ingredients
- Crystallized Ginger & Cinnamon Stick - For garnishing the drink, you can also add a lemon or lime wedge if you'd like.
- Dark Rum - I recommend using Goslings Black Seal Rum for its rich, molasses flavor that pairs perfectly with the pumpkin spices. You can of course use any dark rum or spiced rum or extra spicy rum that you enjoy!
- Pumpkin Spice Simple Syrup - You can use a store-bought version, or check out my recipe here for Homemade Pumpkin Spice Simple Syrup.
- Lemon Juice - For a bright, citrusy note to offset the rum and simple syrup.
- Ginger Beer - Ginger beer plays a big role in this cocktail, adding spice and effervescence. Opt for a brand like Fever-Tree or Bundaberg if you want a bold, spicy flavor. For a milder version, ginger ale can work in a pinch.
Instructions
Start by filling your glass with ice.
Pour 2 ounces of dark rum, 1 ounce of pumpkin spice simple syrup, and ½ ounce of lemon juice into the glass. Stir gently with a cocktail spoon to mix these ingredients and let them chill over the ice.
Top the drink with 2-3 ounces of ginger beer, depending on your preference. If you like a bit more fizz, go for the full 3 ounces. Give the drink a gentle swirl with your spoon to combine the flavors without losing the ginger beer’s carbonation.
Finish your drink by garnishing it with a piece of crystallized ginger and a cinnamon stick. The ginger adds a sweet and spicy bite, while the cinnamon stick brings a warming aroma and doubles as a stirrer.
