You will just need some fresh herbs, plain sugar, and water. In just a few minutes you will have a thyme sugar syrup that will transform any beverage. I like to use it in non-alcoholic drinks to bring a fresh taste and flavor to mocktails, and it is equally as good in cocktails I especially find that it goes amazing with anything lemon flavored.

- Small Pot
- Measuring Cup
- Whisk

Ingredients
- Water
- Sugar - Just regular sugar will do.
- Fresh Thyme - You will want about 8 to 10 fresh thyme sprigs.
Instructions
In a small saucepan, combine water and sugar. Bring to a boil on the stovetop over medium heat.
Once boiling, whisk to dissolve the sugar into the water completely.
Once the sugar dissolves and the water is boiling, add the thyme sprigs.
Allow the thyme to sit in the boiling simple syrup for 30 to 60 seconds.
After infusing, remove the pot from the heat.
Allow the thyme simple syrup to rest for at least 20 minutes to cool and infuse. Optionally, let it sit longer for a stronger thyme flavor.
Strain out the thyme using a fine-mesh strainer.
Once cooled, transfer the strained simple syrup to an airtight jar or glass bottle. Store in the refrigerator for future use.
