Homemade Grapefruit Thyme Soda
This is a simple and delicious mocktail, some might even say its basically a fruit soda. Simple with fresh grapefruit juice, thyme simple syrup, and seltzer water for effervescence. Easy to make, easy to serve, and easy to enjoy!
I think this one is best with fresh grapefruit juice, perfect for a winter or early spring get together. I find that Ruby Red Grapefruit make the best variety for making drinks but you can use other varieties of grapefruit. Of course it can be made with store bought grapefruit juice as well.
The grapefruit goes well with the herbaceous notes of the thyme syrup making an interesting and perfect drink for dry January or whenever you are looking to enjoy.

Ingredients
- Fresh Grapefruit Juice
- Thyme Simple Syrup
- Plain Seltzer
Instructions
To make the Thyme Simple Syrup:
You will need:
- 1 cup water
- 1 cup sugar
- 8-10 springs fresh thyme
In a small pot add the water and sugar. Bring to a boil on the stovetop. Once the water starts to simmer whisk to incorporate the sugar into the water.
Once the sugar is dissolved and the water is boiling add the thyme. Let the thyme sit in the boiling simple syrup for 30 to 60 seconds before removing from the heat.
Let the thyme simple syrup rest for at least 20 minutes before straining out the thyme, but you can wait longer to strain out the thyme for a stronger flavor. Once cooled transfer the strained simple syrup to an airtight jar and store in the refrigerator.
To make the Grapefruit Thyme Mocktail:
Begin by adding the fresh grapefruit juice and thyme simple syrup to a glass.
Stir the mixture well to ensure the flavors are fully combined.
Next, add a handful of ice to the glass to chill the mocktail.
Pour the seltzer over the mixture in the glass.
Stir once more to incorporate the seltzer with the grapefruit juice and thyme simple syrup.
Garnish your mocktail with a sprig of fresh thyme and a slice of grapefruit for an extra touch of elegance.
